Porcelana cacao owes its name to its unusually smooth and opaque cabossa (flesh). Part of the Criollo family, Porcelana is one of the varieties with the widest range of aromatic nuances, as well as the most prized and rare. The most prized treasures have always been the most difficult to conquer. Porcelana: extreme delicacy and an incredible range of aromas
Criollo Cacao represents only 0.001% of the global market. It is even difficult to forecast how much will be produced, because Criollo cacao plants are extremely sensitive and delicate, and productivity varies constantly. Within this tiny percentage, Porcelana is the diamond tip, particularly prone to attack by insects and parasites, cultivated since antiquity and known for its fragility.
Its incredibly rich aromas are associated with a discontinuous product and low yields, due to its extreme delicacy. Cultivated in the Andes for centuries, Porcelana was rediscovered and grafted in the 1990s in Venezuela, at the Hacienda San José, with which Domori has established a 50% joint venture. This partnership led to the Criollo restoration project involving research, designing and building the first greenhouses up until 2001, when Domori bought 50% of the plantation. Since then, Domori has continued to work with the utmost commitment to protecting the most prized cacao: today, the Hacienda San José cultivations guard the world's largest heritage of Criollo biodiversity, with more than 10 varieties.
It is thanks to this long-running collaboration that Domori can now offer chocolate lovers the chance to taste Porcelana and fully explore every nuance of its complex spectrum of aromas. Criollo cacao offers the palate a range of sensory nuances that is unequalled by any other type of cacao. Porcelana has a particularly low level of astringency and bitterness, and therefore requires light roasting in order to preserve all its flavours and offer them intact to our senses. The very first taste reveals an immediate sensation of a pure, balanced and full cacao.
